Effect of Edible Lipid Based Coating on the Microbial and Physicochemical Quality of Fresh Grape ( Vitis Vinifera )

Abstract

This study evaluates the effects of edible coatings on fresh grapes (Vitis vinifera), focusing on microbial quality reduction, moisture loss, and pH during storage. Microbial analysis was conducted using standard methods. The Total Bacteria Count in uncoated grapes at ambient temperature ranged from 0 CFU/g to 8.5 × 104 CFU/g, while TBC in coated grapes at ambient temperature ranged from 0 CFU/g to 3.6 × 104 CFU/g. At refrigerated temperature, TBC in uncoated grapes ranged from 0 CFU/g to 8.2 × 104 CFU/g, and in coated grapes ranged from 0 CFU/g to 5.9 × 104 CFU/g. The Total Coliform Count in UGAT ranged from 0 CFU/g to 4.2 × 104 CFU/g, while TCC in CGAT ranged from 1.0 × 103 CFU/g to 1.0 × 105 CFU/g. At refrigerated temperature, TCC in UGRT ranged from 0 CFU/g to 2.5 × 104 CFU/g, while in CGRT it ranged from 0 CFU/g to 2.0 × 104 CFU/g. The Total Fungi Count in UGAT ranged from 1.5 × 104 CFU/g to 5.4 × 104 CFU/g, while TFC in CGAT ranged from 8.0 × 102 CFU/g to 2.9 × 104 CFU/g.
