Acceptability of Indigenous Delicacies Prepared with Selected Local Green - Leafy Vegetables in Food Service Establishments in Kogi State, Nigeria

Abstract

This study evaluated the acceptability of three indigenous delicacies prepared with selected local green-leafy vegetables in food service establishments in Kogi State, Nigeria namely Ore egbe, Ugu and Anyeba soups. These soups were prepared with Ceratotheca sesamoides, Telferia occidentalis and Ocimum gratissimum vegetables, respectively. The objectives of the study were to evaluate the sensory attributes of delicacies prepared with selected green-leafy vegetables in food service establishments and determine the influence of sensory attributes on the overall acceptability the soup samples prepared in food service establishments in Kogi State. The study design involved sensory studies of which 40 trained panelists were randomly selected from 4 food service establishments. The instrument for data collection was sensory evaluation form which was based on 9-Point hedonic scale rating. The data gathered were analyzed using one-way ANOVA and multiple linear regression. The sensory evaluation results showed that none of the soups was most preferred soup, in terms of overall acceptability as the three soups (Ore egbe, Ugu and Anyeba) had high scores of 8.14±1.14, 8.63±0.87, and 8.63±0.84, respectively. Also, the taste, aroma, appearance and colour of the soups were liked very much while the texture of Ore egbe soup was liked very much, Ugu soup was liked slightly and Anyeba soup was neither liked nor disliked. Result of the influences of sensory attributes on the overall acceptability of these soups showed colour and aroma influenced the overall acceptability of Ore ogbe and Ugu soups, with R2 of 0.680 and 0.664, respectively, while colour and taste were the attributes that influenced the overall acceptability of Anyeba soup with R2 of 0.718. In conclusion, these local green-leafy vegetables could augment exotic vegetables in dishes served in food establishments in Kogi State if new recipes are developed from these delicacies.
