Abstract

The study assesses the food hygiene practices among food vendors at the Tsohuwar Kasuwa market in Azare, Katagum Local Government Area, Bauchi State. Food hygiene is a measure that ensures the safety and quality of food throughout its handling process. These practices prevent food poisoning. It is associated with the prevention and preservation of health and healthy living. A descriptive survey was adopted; the target population for the study comprises all food vendors in Tsohuwar Kasuwa market, which is 100. The entire population was used as a sample, and the instrument for data collection was a structured questionnaire. The instrument used was a structured questionnaire developed by the researcher. The instrument was validated and established by the two experts, and errors were corrected. Tests and retest was done for the reliability, and a score of 0.73 was obtained. The obtained data were analyzed using descriptive statistics and presented in a frequency distribution table with percentages. The socio–demographic characteristics of the participants revealed that the majority of the respondents were between 15 and 19 years old (44.8%) and were female (67.2%). Findings revealed that the highest number of food vendors (89.6%) perform hand hygiene before handling food, and refrigeration as a method of food preservation has the highest frequency of 20 (29.9%). It is recommended that government and non-governmental organizations should train and plan health education programs for food vendors to improve their hygiene, storage, and serving. This will reduce food-borne disease. Key: Food, Hygiene, practice, vendors
