Exploring Jam Formulation Potential from Bayelsa Grown Pawpaw ( Carica papaya) and Subsequent Quality Assessment

Abstract

Pawpaw is a commonly consumed agro-based product in Nigeria but due to its highly perishable nature, there is little or no organized cultivation of this fruit in Nigeria attributed to reduced expertise on value addition. This study, therefore focused on preliminary conversion of Bayelsa- grown pawpaw into a shelf-stable, higher-value product (jam) aimed at reducing postharvest losses, increase farmer incomes, strengthen local value chains and bridge the gap on value addition technical expertise. Pawpaw at three different stages of maturity were used in this formulation and based on consumer appreciation, one of the three was further subjected to quality evaluation following standard procedure. Results showed that the parameters investigated were within the acceptable ranges, a pointer that Bayelsa grown pawpaw is a viable raw material for jam product formulation, encouraging intentional pawpaw farming, fostering industrialization, job creation, poverty alleviation and improved livelihoods in line with Sustainable Development Goals (SDGs).
