Comparative Analysis of Nutrient Composition in Boiled Tubers of Two Bitter Yam (Discorea dumetorum) Cultivars
Abstract
The aim of this research was to determine the Comparative Analysis of Nutrient Composition in Boiled Tubers of Two Bitter Yam (Discorea dumetorum) Cultivars. Two cultivars of bitter yam tubers made up of (Onyeukwu, deep yellow when boiled coded as ANO) and Ejiobi, milky when boiled coded as BEO were already identified by National Roots Crops and Tubers Umudike, Umuahia, Abia State) were peeled and washed then sliced to 2mm sizes, boiled for 40 min until cooked, air dried under a controlled air conditioned environment for 48h and was milled to particle size less than 0.7mm and and were investigated for their proximate composition using standard methods, Mineral profile was analyzed using Inductively Coupled Plasma Optical Emission Spectrophotometer (ICPOES), the sugar profile was analyzed using HPLC- RI. The had low moisture (ANO 5.99 & BEO 4.47%) ash (ANO 1.82 & BEO 1.03) %, protein (ANO 5.69 & BEO 3.87%), they were low in crude fibre (ANO 0.89 & BEO 0.94) and low in crude fat (ANO 0.17 & BEO 0.19%) respectively, they were high in carbohydrate (ANO 85.45 & BEO 89.52) %, & % energy level (ANO 366.09 & BEO 375.22%) and they had statistical variation among the cultivars. The tubers were rich in mineral: Calcium (ANO 30.11& BEO 33.58) %, Manganese (ANO 22.74 & BEO 21.42 %), Zinc (ANO 20.55 & BEO 10.61%), Sodium ANO 14.60 & BEO 14.30 %) & Iron (ANO 6.50 & BEO 9.56%) & they statistically difference between the cutivars. The sugar profile had glucose (ANO 1.56 & BEO 1.44%), Sucrose (ANO 2.40 & BEO 2.54%), fructose (ANO 2.04& BEO 2.16%) non significantly, suggesting that they had low sugar content thus may not spike up glucose. The comparative analysis of nutrient composition in boiled tubers of two bitter yam cultivars indicates that they are good sources of sources of calcium, Manganese, Zinc, Sodium, Iron, protein& simple sugar thus, it suggests that the cultivars of the bitter yam possess medicinal value.
